You’ve probably seen 18/10 stainless steel stamped on a spoon, printed on a cookware box or tucked away in the product description of a pan you’ve been eyeing.
And if you’re anything like me, you may have looked at it and thought:
Okay… but what does that actually mean?
Is 18/10 better than 18/8? What on earth is 18/0? And why does one stainless steel pan work on induction while another one apparently refuses to cooperate?
Don’t worry. You do not need a metallurgy degree to understand this.
Those two little numbers actually tell you something useful about the stainless steel you’re buying and once you know what they mean, shopping for 18/10 stainless steel cookware becomes a whole lot less confusing.
Let’s decode the numbers.
What Does 18/10 Stainless Steel Cookware Mean?
The simple answer:
18/10 means approximately 18% chromium and 10% nickel in the stainless steel alloy.
The remainder is primarily iron, along with smaller amounts of other elements depending on the particular steel specification.
So the numbers aren’t a ratio or a rating.
They’re basically telling you what’s in the metal.
Why chromium?
Chromium is one of the reasons stainless steel doesn’t behave like ordinary steel.
When stainless steel contains enough chromium, it can form an extremely thin protective layer of chromium oxide on its surface when exposed to oxygen. That passive layer helps protect the underlying metal from corrosion.
And here’s the clever part: if the surface is damaged, that protective layer can reform in the presence of oxygen.
That’s a big part of what makes stainless steel so useful in a kitchen.
And What about Nickel ?
Nickel helps stabilise the structure of many common stainless steel alloys and contributes to their corrosion resistance and appearance.
It’s also one reason many 18/10 stainless steel cookware pieces have that lovely bright, polished finish.
So those two numbers aren’t just marketing decoration.
They tell you something real about the metal
Chromium helps with corrosion resistance. Nickel helps with the structure and properties of the steel.
18/10 vs 18/8 vs 18/0 — What’s the Difference?
You might also see 18/8 and 18/0 on cookware. Here’s how they compare:

18/8 stainless steel Contains 18% chromium and 8% nickel. Technically Grade 304, same as 18/10 — the difference in nickel content is so small that for practical cooking purposes they perform almost identically. You’ll see 18/8 used in some cookware and a lot of food storage containers. Perfectly fine.
18/10 stainless steel Contains 18% chromium and 10% nickel. Also Grade 304. Slightly shinier than 18/8, marginally more corrosion-resistant. This is the standard for quality cookware and premium flatware. What most reputable cookware brands use for their cooking surface.
18/0 stainless steel Contains 18% chromium and zero nickel. Also called Grade 430. Less shiny, slightly less corrosion-resistant than 18/10, but strongly magnetic — which means it works on induction cooktops without any additional base layer. Ideal for anyone who needs to avoid nickel entirely. Also used on the exterior base of many 18/10 pans specifically to make them induction-compatible.
The Induction Cookware Question
This is where it gets a bit clever.
Pure 18/10 stainless steel is non-magnetic, which means it won’t work on induction cooktops. But a lot of quality 18/10 cookware is induction-compatible — how?
The answer is in the construction. Many tri-ply and five-ply stainless steel pans use 18/10 on the interior cooking surface where food contact happens and where you want the best corrosion resistance and 18/0 on the exterior base, where the magnetic properties are needed for induction.
So when you see “induction compatible” on a quality stainless steel pan, that’s often what’s happening: 18/10 inside, 18/0 outside. Best of both worlds.
Brands like All-Clad, Demeyere, and Tramontina Tri-Ply all use this approach. The cooking surface grade matters more than the exterior — always check what the interior is made from.
What About Tri-Ply and Five-Ply Construction?
While we’re here those numbers matter too, and they work alongside the 18/10 grade rather than replacing it.
Stainless steel on its own is a poor conductor of heat. It heats unevenly, creating hot spots. This is why most quality cookware uses a multi-layer (or “clad”) construction:
Stainless steel → aluminium → stainless steel
Tri-ply (3-ply): Three layers – typically 18/10 stainless steel interior, aluminum core, 18/0 stainless steel exterior.
The aluminum core distributes heat evenly. Good performance for everyday cooking.
Five-ply (5-ply): Five layers – additional stainless steel and aluminum layers for even better heat distribution and heat retention. Used in higher-end cookware. Heavier, more expensive, and genuinely better heat performance.
What About Disc-Bottom Stainless Steel?
Some stainless steel pans have a heat-conducting disc bonded to the bottom of the pan. Others, known as fully clad cookware, have their heat-conducting layers running through the sides as well.
The difference is mainly where the heat-conducting material is located.
A disc-bottom pan concentrates its heat-conducting layer at the base, while fully clad cookware can spread heat through the sides too.
That can be useful for foods that need more even heating around the whole pan, not just underneath.
So which should you choose?
If you mainly cook things in the bottom of the pan – frying, sautéing, boiling or simmering – a good disc-bottom pan can work perfectly well.
If you often cook food against the sides of the pan or want more even heat distribution throughout the cookware, fully clad construction may be worth considering.
Neither is automatically better. The right choice depends on how you cook.
How to Spot 18/10 on a Product Label
The labelling isn’t always obvious. Here’s where to look:
On flatware/cutlery: Usually stamped directly on the back of the handle. Look for “18/10” or “18-10” in small print.
On cookware boxes: Listed in the product specifications, often in small print under “material” or “construction.” Sometimes written as “Grade 304.”
On the pan itself: Less commonly stamped on cookware than on flatware, but some brands include it.
Magnet test: If a magnet doesn’t stick to the cooking surface of a pan or sticks only very weakly. It’s likely 18/10 or 18/8. If a strong magnet sticks firmly to the cooking surface, it’s 18/0. This isn’t foolproof but it’s a quick field test.
When in doubt, check the brand website: Reputable brands list the steel grade in their product specifications. If a brand won’t tell you what grade their steel is, that’s a signal.

Does 18/10 Mean No Leaching at All?
Now, we get to the part most of us actually care about:
What happens to the metal when we’re cooking food in it?
The honest answer is that small amounts of nickel and chromium can migrate from stainless steel into food under some conditions.
Research has found that migration can vary depending on factors such as the stainless steel composition, acidity of the food, cooking time and whether the cookware is new or has been repeatedly used.
Acidic foods and long cooking times can increase migration in testing conditions.
That doesn’t mean your stainless steel saucepan is quietly poisoning your family every time you make tomato sauce.
It means that “stainless” doesn’t mean absolutely nothing can ever migrate from the metal.
For most people using good-quality stainless steel cookware normally, the available research does not suggest that everyday use presents a significant health concern.

18/10 means 18% chromium and 10% nickel. Those two elements are what make the steel food-safe, corrosion-resistant, durable, and shiny.
It’s the standard food-grade specification used by quality cookware brands worldwide – the same grade used in commercial kitchens and food processing facilities. The FDA classifies it as food-safe for good reason.
When you’re shopping for stainless steel cookware, looking for 18/10 on the interior cooking surface is one of the fastest ways to distinguish quality from budget before you even look at the brand name or the price tag.
